How to Grow Sushiro Korean Radishes

Choose a location with appropriate soil and prepare by fertilizing and breaking up the soil until it is loose. Plant seeds an inch apart and thin to three inches apart 10 days after seedlings emerge. Radishes mature quickly, so not much care is needed besides careful watering. Plant in successive waves for more harvests.

Harvesting Sushiro Korean Radishes

After the recommended days to maturity, grab the leaves of the radishes as close to the soil as possible. Pull firmly to get your radishes out of the soil. These radishes are large, so you may have to pull quite hard!

If you find that your radish tops keep breaking before you get the roots out of the soil, be sure you’re pulling as low as possible. If you still struggle, use a hoe or shovel to loosen the ground around the roots.

Culinary Tips

Sushiro radishes can be used anywhere you normally use radishes. Try it in salads for a fresh crunch without the usual bitter flavor that comes with radishes. Thin slices of radishes are also great as a garnish for soups and is very common in some cuisines! Pickled radishes are also amazing; the pickling adds to the radishes’ natural crunch and brightness and makes it even better. Try it in kimchee too!
