Cardoon Seeds
Sow seeds indoors in January in pots. Then thin out weak plants. Transplant seedlings after the final frost but when it is still cool. Using fertilizer helps growth significantly. Harvest after 60-75 days, leaving the base of the plant for the next season. Take leaves and thorns off and peel the stalks of their outside layer. Then fry, sautee, steam, or pickle the stalks. Plants can be kept in the ground for 6-7 years, and after multiple years plants grow up to 6-8."
